Similar to most green teas, the temperature of the water is one of the key factors, and it is a common mistake to use 100°C boiling water directly to make tea. Generally speaking, a water temperature of around 80°C is a more suitable choice.

The tenderness of Mengding Ganlu is directly proportional to the greenness, so for green tea with young leaves, you can choose a water temperature of about 75℃ for brewing. The color of the tea soup is tender and green and bright, and the taste is fresh, and at the same time, it can reduce the destruction of vitamin C in the tea; if the water temperature is too high, it is easy to make the tea soup turn yellow, and the taste is bitter, and at the same time, the loss of vitamin C is also more serious.

Take an appropriate amount of top quality Mengding Ganlu tea leaves, usually about 4 grams, and prepare a white porcelain covered bowl or clear glass cup.

When boiling water, it is best to choose mountain spring water, followed by pure water. After the water temperature is boiled to 100℃, pour it into a fair cup and cool it down slightly, so that the water temperature can be reduced to 80℃ to 85℃.

At the beginning of brewing, it is recommended to use the upward throwing method, i.e., first fill the cup with seven-minute full of water, and then throw the tea leaves into the cup, and enjoy the process of the tea leaves gradually sinking and unfolding.

If brewing in a covered bowl, warm the cup first. Slowly pour the cooled water along the edge of the bowl to reach the convex edge of the bowl. Mengding Ganlu is not to be smothered, so do not rush to put the lid on the tea. Wait 5-8 seconds for the tea broth to appear, then quickly cover the cup to finish brewing. Avoid over-boring the tea leaves.
